Ingredients:
1 lb ground chicken
1 egg
2 celery stalks, finely chopped
1/3 cup hot sauce
4 tbsp *GHEE from ingredient
1/3 cup bread crumbs
1/3 cup crumbled blue cheese
1/4 cup sliced green onions
2 cloves minced garlic
1 tsp salt
1/2 tsp onion powder
*(Ghee/Butter ratio can be adjusted for weaker infusion if preferred)
Directions:
Preheat the oven to 350 degrees F.
Brush large baking sheet with oil
In a small saucepan, combine GHEE, hot sauce, blue cheese, and salt over medium heat
Whisk until butter and cheese have melted ~2 minutes. remove from heat and let cool
In a medium bowl, combine bread crumbs, celery, garlic, egg, green onions, and onion powder
Add chicken and half of the hot sauce mixture, mix until combined
Form 1-inch meatballs and transfer to oiled baking sheet
Bake for 15-17 minutes (or until lightly golden)
Drizzle remaining sauce over meatballs before serving
Optional additions and substitutes:
Add in one finely diced jalapeno into the breadcrumbs/celery mix for extra spice
Replace ground chicken with ground beef, turkey, or desired protein.
Replace blue cheese with freshly shredded parmesan or cream cheese if preferred
